Goji Cookies

Ingredients

  • 1 cup (240g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (165g) packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (340g) semisweet chocolate chips with 2 tablespoons dry goji berries

Steps

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Cream Butter and Sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and well combined (about 2-3 minutes).
  3. Add Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the butter mixture, mixing until combined. Be careful not to overmix.
  6. Add Chocolate Chips: Stir in the chocolate chips until evenly distributed throughout the dough.
  7. Scoop Dough: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake: Bake for 10-12 minutes, or until the edges are golden brown but the centres are still soft.
  9. Cool: Let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely, and add some goji berries for topping.
