Coconut Milk Soup with Goji Berries

Ingredients

- Coconut milk  
- Baby bok choy  
- Long beans  
- Onions & ginger  
- Handful of goji berries (soaked for extra flavour) .

Steps

1. Sauté onions and ginger, then add vegetables and coconut milk.  
2. Simmer until tender, then stir in soaked goji berries before serving.
